Pork fillet in mustard cream

Ingredients for 2 servings:

  • 350 g pork fillet(s)
  • salt and pepper
  • 20 g clarified butter
  • 3 tsp mustard
  • 1 small onion(s)
  • 120 g crème fraîche
  • 75 ml whipped cream

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Rub the pork fillet with salt and pepper. Heat the lard. Sear the fillet all over, brush with 1 teaspoon of mustard, and continue cooking over reduced heat. Dice the onion and sauté briefly in the frying fat. Add the crème fraîche and cream, cover the pan, and braise the meat for 15-20 minutes over moderate heat. Before serving, season the sauce with the remaining mustard. Slice the pork fillet evenly. Serve with the mustard cream.
