Fried asparagus

Ingredients for 2 servings:

  • 1 bunch of asparagus
  • 1 pinch(s) of sugar
  • 1 lemon(s)
  • e.g. Parmesan
  • 2 eggs
  • 4 tbsp flour
  • Fat (frying fat)
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 38 minutes

Bring a large pot of salted water, a pinch of sugar, and a lemon wedge to a boil. Peel the asparagus, trim the bottom ends, and cook for five to eight minutes, depending on the size, until al dente. Drain the asparagus. Grate the Parmesan cheese and whisk it with the eggs and four tablespoons of flour. Season with salt and pepper. Coat the asparagus spears first in the remaining flour and then in the breading. Heat the oil and fry the asparagus spears for about three minutes until golden brown.
