Wild garlic flowers baked in champagne batter or beer batter

Ingredients for 4 servings:

  • 1 bunch of wild garlic flowers
  • 1 egg(s)
  • e.g. salt and pepper
  • 100 g flour
  • 100 ml sparkling wine or beer
  • e.g. oil for frying

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes

great starter or wonderful decoration for wild garlic season

Wash the wild garlic flowers (dip them upside down in a bowl of water) and dry them gently. For the beer batter, separate the egg. Mix the egg yolk with sparkling wine (or beer) and flour. Beat the egg whites until stiff and fold in. Lightly salt and pepper the batter. Dip the flowers into the beer batter and deep-fry in hot oil. Briefly drain on kitchen paper, season with salt and pepper if desired – done! Arrange with fresh flowers or wild garlic leaves and serve. Tips: If children are eating with you, simply use milk instead of alcohol. Fried wild garlic flowers make a great starter and have a wonderfully mild garlicky flavor. Few people use them, although they are a wonderful garnish for soup, pesto, etc. during wild garlic season. They also go very well with asparagus dishes.
