Cheesecake with cherries

Ingredients for 1 servings:

  • 2 eggs
  • 125 g sugar
  • 100 ml oil (e.g. sunflower oil)
  • 100 ml orange juice
  • 2 tbsp cocoa powder
  • 150 g flour
  • ½ pack of baking powder
  • 3 eggs
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 500 g quark
  • ½ lemon(s), the juice
  • 100 g cream
  • ½ tbsp semolina
  • 2 jars of cherries (e.g. sweet cherries, morello cherries) or other fruit
  • 2 packs of cake glaze of your choice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

for a springform pan of 26 or 28 cm

Preheat the oven to 200°C. For the cake, beat the eggs with the sugar until creamy. Stir in the remaining ingredients and pour into the springform pan. Pre-bake the cake for approx. 20 minutes at 180°C fan-assisted oven. For the quark mixture, beat the eggs with the sugar and vanilla sugar until creamy. Stir in the remaining ingredients and pour onto the pre-baked base. Bake the cake for approx. 20-25 minutes and allow to cool completely. For the topping, drain the cherries and collect the cherry juice. Prepare the cake glaze according to the package instructions using the cherry juice. Add the cherries to the liquid glaze and spread over the cooled cake. Allow to set and ideally store in the refrigerator. Of course, any other fruit will work instead of cherries.
