simple, suitable for chocolate processing
Crumble the cookies into a freezer bag using a rolling pin. Melt the butter. Stir the flavoring into the butter immediately to ensure it is evenly distributed. Slowly heat the chocolate in a double boiler. Once all the chocolate has melted, stir in the crumbled cookies, powdered sugar, and butter, and refrigerate for 10 minutes. Scoop the mixture into portions with a spoon, press down slightly, and form small balls between your palms. Roll each in cocoa powder or desiccated coconut and let each one cool in a praline mold. I use this as the basic recipe for my pralines. You can experiment a lot—whether with the chocolate, the flavoring, or additional ingredients like brittle. It’s so simple—and yet has such a powerful effect!
