Spicy sausage salad

Ingredients for 4 servings:

  • 500 g meat sausage (Lyoner)
  • 350 g radish(s)
  • 1 bunch of radishes
  • 2 bunches of chives
  • 3 tbsp white wine vinegar
  • 4 tbsp sunflower oil
  • 1 tsp mustard, medium hot
  • some salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 20 minutes; Total time approx. 50 minutes

Peel the Lyoner sausages, halve them lengthwise, and slice them. Clean, peel, and finely grate the radish. Place the grated radish on a plate, season well with salt, and let it stand for 10 minutes. Clean and wash the radishes, and cut them into quarters or eighths, depending on their size. Cut the chives into small rolls. Mix the sausage, radishes, and chives together in a bowl. Place the grated radish in a sieve and rinse with cold water. Then place it in a kitchen towel, squeeze it dry, and add it to the remaining ingredients. Whisk together the vinegar, oil, mustard, salt, and pepper until you have a creamy salad dressing. Pour the dressing over the salad and toss everything together. Cover the salad and let it stand for about 10 minutes.
