Potato and spinach casserole with minced sausage

Ingredients for 2 servings:

  • 450 g potatoes, peeled, cut into thin slices
  • 1 medium-sized onion(s), finely diced
  • 150 g sausage
  • 1 tbsp oil for frying
  • 2 large tomatoes, cut into small pieces
  • 200 g leaf spinach (frozen)
  • 1 clove(s) garlic, finely chopped
  • 3 sprigs of thyme
  • 2 m.-sized eggs
  • 100 ml milk
  • n. B. Nutmeg
  • e.g. salt and pepper
  • 1 tbsp chives, cut into rolls

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Boil the potato slices in salted water for 7 minutes, drain well and arrange half of them in a greased baking dish, covering the bottom. Squeeze the sausage meat out of the skin and chop it up. Heat the oil in a pan and fry half of the onion with the minced sausage. Add the tomatoes, spinach and garlic and sauté everything for 5 minutes. Season with pepper, nutmeg and salt and spread over the potatoes in the baking dish. Cover everything with the remaining potato slices. Rinse the thyme sprigs, pat dry and strip off the leaves. In a bowl, mix the eggs with the milk, thyme and the remaining onions and season with salt, pepper and nutmeg. Pour this egg and milk mixture over the ingredients in the dish and bake the casserole in a preheated oven at 200°C for approx. 30 minutes. Turn off the heat and let it stand for 5 minutes, then serve sprinkled with chives.
