Ingredients for 4 servings:
- 4 chops (not too lean)
- 200 g wild garlic
- 100 ml olive oil
- 1 tbsp mustard, medium hot
- 1 tsp sugar
- 1 tbsp vinegar
- salt and pepper

Chop the wild garlic and then blend it with the oil to a pesto-like cream. Add the mustard, sugar, and vinegar and mix well. Season with salt and pepper. Rub the mixture onto the chops; for large chops, you’ll need about a teaspoon per side. Let it sit for at least an hour. These chops taste best grilled. Depending on the thickness of the meat and the grill temperature, cook for 5-10 minutes per side.
