Salmon in herb and mustard cream

Ingredients for 4 servings:

  • 600 g salmon fillet(s)
  • 1 tbsp lemon juice
  • salt and pepper
  • 1 bunch of dill
  • 1 bunch of chives
  • 1 bunch of parsley
  • 150 g crème fraîche
  • 5 tbsp fish stock
  • 2 tsp mustard

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

First, drizzle the salmon fillet with lemon juice. Sprinkle with salt and pepper and place in an ovenproof dish. Wash and finely chop the herbs. Mix three-quarters of the herbs with the crème fraîche, stock, and mustard and pour over the fish. Bake the salmon in a preheated oven at 200°C (top/bottom heat) for about 20 minutes on the middle rack. Sprinkle the fish with the remaining herbs and serve. Approx. 382 kcal per serving.
