Vegetable smoked pork casserole

Ingredients for 4 servings:

  • 700 g smoked pork, diced
  • 400 g jacket potatoes
  • 750 g vegetables, e.g. Kaisergemüse, frozen
  • 50 g butter
  • 40 g flour
  • 500 ml milk
  • 1 tbsp vegetable broth, instant
  • salt and pepper
  • 1 tbsp mustard
  • 1 egg(s)

Instructions

Working time approx. 50 minutes; Total time approx. 50 minutes

Slice the potatoes and blanch the vegetables in boiling salted water for 2-3 minutes. Heat the butter, stir in the flour, and while stirring, add the milk. Bring to a boil. Season with stock, salt, pepper, and mustard. Blend with the egg. To do this, whisk the egg in a bowl. Carefully add a little of the hot, but not boiling, sauce while stirring constantly. After about a ladleful of sauce has been added, return everything to the remaining sauce. Layer the smoked pork, vegetables, and potatoes one after the other in a baking dish. After the vegetables, add half of the sauce to the dish, then add the potatoes and pour the remaining sauce over them. Bake in a preheated oven at 150°C (convection oven) for about 35 minutes.
