Herb cream cheese roulades

Ingredients for 4 servings:

  • 4 roulades (beef)
  • Salt
  • pepper
  • 150 g cream cheese
  • 8 tbsp breadcrumbs
  • 1 egg(s)
  • 1 tbsp chives, cut into rolls
  • 1 tbsp parsley, chopped
  • 1 tbsp basil, chopped
  • 1 garlic clove(s)
  • 1 pinch of nutmeg
  • 1 pinch(s) of cayenne pepper
  • 1 tbsp clarified butter
  • 600 ml meat broth
  • possibly sauce thickener if required

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Season the meat with salt and pepper. Mix the cream cheese with the breadcrumbs, egg, and herbs. Peel and chop the garlic, then rub it into a paste with a little salt, then stir it into the cheese mixture. Season with salt, pepper, nutmeg, and cayenne pepper. Brush the roulades with the cheese mixture and roll them up. Brown on all sides in hot clarified butter. Pour in the meat broth, cover, and simmer for about 70 minutes. Thicken the pan juices with a sauce thickener if desired, and serve immediately.
