Vegetable stew with gnocchi

Ingredients for 4 servings:

  • 500 g gnocchi
  • 2 onions
  • 1 can of tomatoes, chopped
  • 750 ml vegetable stock
  • 600 g mixed vegetables, frozen or fresh
  • 2 tbsp mixed herbs, frozen
  • pepper
  • chili powder
  • Tabasco
  • Garlic

Working time approx. 30 minutes; Total time approx. 30 minutes

Quickly prepared and low in calories

Peel and wash fresh vegetables and cut them into the desired size. Sauté onions in 1-2 tablespoons of oil. Add hot vegetable stock and the vegetables to the pot and cook for 10 minutes. Add tomatoes. Season with pepper, chili powder, Tabasco, and garlic. Cook for 5 minutes over medium heat. Add the gnocchi and herbs. The gnocchi should be done after 3-5 minutes, then serve immediately. The more varied the vegetables, the more interesting the vegetable stew will be. We like to use frozen vegetables. It’s faster and we have access to a wide variety of vegetables. Sometimes I also add two finely chopped potatoes.
