Low-fat and low-calorie apple cinnamon muffins

Ingredients for 1 servings:

  • 50 g wheat flour, type 405
  • 50 g wheat flour (wholemeal)
  • 1 egg(s)
  • 2 tbsp vegetable oil, about 15 g
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 1 tsp, leveled baking powder
  • 50 ml buttermilk, 1% fat
  • 1 tsp sweetener, liquid
  • ½ lemon(s), juice
  • ½ tsp, smothered cinnamon
  • some sweetener, liquid
  • 1 apple

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

For 6 muffins

For the filling, mix the lemon juice, cinnamon, and sweetener. Peel, quarter, and core the apple, and cut into very small cubes. Mix the apple cubes with the marinade. For the batter, beat the eggs, vanilla sugar, sweetener, and salt until frothy. Gradually add the oil. Mix both types of flour with the baking powder and add to the egg mixture in portions, alternating with the buttermilk. Briefly drain the marinated apple cubes in a sieve and stir 3/4 of them into the batter. Pour the batter into a greased muffin tin. Distribute the remaining apple pieces over the batter. Bake in a preheated oven at 180°C for about 25 minutes. Let the muffins rest for about 10 minutes after baking, then remove from the tin and let them cool on a wire rack.
