Ingredients for 3 servings:

  • 75 g flour
  • ½ tsp sugar
  • 1 pinch of salt
  • 200 ml milk
  • 1 egg(s) (size M)
  • 3 tbsp butter, liquid
  • ½ tsp lemon(s) – zest, grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to approximately 75°C. Place flour, sugar, and salt in a mixing bowl. Whisk together the milk and egg in a second bowl. Slowly whisk the egg mixture into the flour mixture. Add 2 tablespoons of melted butter and the lemon zest. Let the crepe batter rest for about 15 minutes. Lightly grease the pan for each crepe with butter and heat. Add a small ladleful of batter to the pan. Immediately swirl the pan to spread the batter evenly. Cook the crepes over medium heat for about 2 minutes, turning them once with a spatula. Keep the crepes warm on a plate in the oven.
