Dutch matjes with dill cream

Ingredients for 4 servings:

  • 4 herring fillets
  • 1 apple
  • 50 g celeriac, cooked
  • 50 g beans, green, cooked
  • 50 g potatoes, waxy and cooked
  • 1 tsp onion(s), red
  • 1 bunch of dill
  • 2 dl cream
  • 1 lemon(s)
  • 4 tbsp olive oil
  • 1 tsp white wine vinegar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

In court

Dice the apple, celery, beans, and potatoes. Mix with 2 tablespoons of olive oil, wine vinegar, pepper, salt, and the chopped onion. Chop the dill and mix half of it in. Place a ring on the plate and fill it with the vegetables, pressing it down. Cut the herring into pieces and garnish. Peel off the ring. Mix the cream with the lemon juice, season with salt and pepper, and stir in the remaining dill. Whisk the sauce slightly, then pour it around the towers. Garnish with a sprig of dill.
