Ingredients for 4 servings:

  • 1 tsp butter
  • 1 liter of milk
  • 1 pinch of salt
  • 150 g semolina
  • 2 eggs, beaten
  • Clarified butter, for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 30 minutes

Grease a saucepan with butter and bring the salted milk to a boil. Add the semolina to the boiling milk, stirring constantly, and cook until a thick porridge forms. Pour the porridge onto a floured pastry board and, using a wide knife dipped in cold water, smooth it into a 1.5 cm thick sheet. Once completely cooled, cut it into even slices, dip them in beaten egg, and fry in a pan until golden brown on both sides. Serve with vegetables or stewed fruit.
