BBQ meatloaf with cheese

Ingredients for 6 servings:

  • 200g Gouda
  • 100 g fried onions
  • 1 ½ kg meatloaf
  • 100 g BBQ rub, e.g. Magic Dust, OFA
  • 3 handfuls of chips (grill chips)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 hours 30 minutes; Total time approx. 3 hours

Cut the Gouda into small pieces. Mix with the fried onions and meatloaf, then shape into a loaf shape. Spread the BBQ rub on a work surface, place the meatloaf on top, and sprinkle it all over. Preheat the grill and toss three handfuls of chips into the embers, then fill a bowl with warm water. Place the meatloaf on the grill, insert a core temperature probe, and smoke at 150°C to 200°C. Once the meatloaf has reached an internal temperature of 70°C, it can be removed from the grill.
