Fake Saltimbocca for the grill

Ingredients for 6 servings:

  • 1 kg pork (false pork loin)
  • 1 bunch of sage
  • 1 pack of ham (e.g. Kaiserschinken) or another mild ham
  • possibly pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the pork loin into thin slices. Season with pepper, if desired. Cover both sides with a sage leaf and a slice of Kaiserschinken ham. Roll up and secure with a toothpick. Grill over charcoal at a moderate heat. Note: This recipe is a rustic variation of the classic Saltimbocca alla Romana for the summer barbecue season. The veal escalopes are too fine for the grill. The Parma ham is too strong for it. Avoid using heavily smoked hams, such as Black Forest ham. Kaiserschinken from Aldi has proven to be the best choice.
