Ingredients for 16 servings:
- 3 kg pork, not too fatty
- 1 kg pork (back or neck bacon)
- 70 g salt
- 500 g tomato paste
- 15 g paprika powder, hot
- 10 g pepper
- 3 g chili powder
- Garlic as desired
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
Dice the pork and bacon, season with salt, and grind twice through the fine disk of a meat grinder. Mix in the spices, tomato paste, and garlic thoroughly. Form the meat mixture into finger-thick rolls, each weighing approximately 25-30g. Pan-fry as desired, but it tastes especially good grilled.
