Tinos sausage salad

Ingredients for 4 servings:

  • 300 g garlic sausage (meat sausage)
  • 200g Gouda
  • 20 date tomatoes or cocktail tomatoes
  • ½ bunch of spring onions
  • 150 g gherkins
  • ½ bunch parsley
  • 4 sprigs basil
  • 1 jar of shallots
  • 2 tbsp, heaped mustard, medium hot
  • 6 tbsp cucumber juice
  • 2 tbsp vinegar
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp, heaped mayonnaise
  • 2 eggs, hard-boiled

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Ideal for a buffet – or as a quick dinner

Cut the sausage into thin slices. Halve the cherry tomatoes lengthwise. Slice the spring onions into fine rolls. Then cut the cheese into small pieces or strips. Cut the gherkins lengthwise into thin strips and then slice them. Cut the chives into small rolls (scissors work best). Quarter the eggs and finely chop them. Drain the pearl onions and place everything in a bowl. Mix the mustard, pickle juice, vinegar, salt, pepper, and mayonnaise into a dressing, add it to the ingredients in the bowl, and mix everything gently. Chill for an hour and then enjoy with farmhouse bread, baguette, or brown bread.
