Mother-in-law's cheese with wild garlic

Ingredients for 4 servings:

  • 200 g shepherd’s cheese
  • 1 bunch of wild garlic
  • 4 large mint leaves
  • 1 small spring onion(s)
  • 150 g Greek yogurt
  • 1 tbsp lime juice
  • ½ tsp spice paste (umami paste)
  • 1 tbsp olive oil
  • 1 pinch(s) of pepper
  • 1 pinch(s) of raw cane sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Mash the cheese with a fork. Finely chop the wild garlic and mint. Finely slice the white part of the spring onion and use the green part for something else. Mix all ingredients thoroughly. Season with pepper and sugar. Let it sit for at least an hour, or preferably overnight in the refrigerator. Tip: Perfect with BBQ, as a spread, to enhance sauces, etc.
