Ingredients for 5 servings:
- 120 g sugar
- 40 g water
- 6 egg yolks
- 40 g sugar
- 240 g dark chocolate coating
- 500 g cream
- 200 g raspberries, fresh
- 5 tsp sugar
- 1 tbsp lemon juice

For the chocolate parfait, bring 120g sugar and 40g water to a boil until the sugar dissolves. Then, add the egg yolks and 40g sugar to a bowl and beat until frothy. Slowly stir in the sugar and water and continue beating until frothy. Melt the chocolate coating in a double boiler. Meanwhile, whip the cream in a bowl until stiff peaks form. Then slowly stir the melted chocolate coating into the bowl containing the frothy egg yolks. Once well blended, fold in the cream. Pour the finished mixture into a silicone mold and freeze for at least 3 hours. For the raspberry glaze, wash the raspberries, then puree them in a bowl. Season with sugar and lemon juice. Finally, strain the raspberries through a sieve and chill in the refrigerator.
