Salmon Timbale

Ingredients for 4 servings:

  • 100 g mascarpone
  • 100 g Turkish yogurt
  • ½ tsp peppercorns, green
  • 2 tbsp chives, in rolls
  • 4 slice(s) smoked salmon
  • ½ lemon(s), unsprayed, juice+zest
  • 1 jar caviar (salmon)
  • salt and pepper
  • 4 sprigs chives, long blanched

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

Combine the yogurt and mascarpone with the peppercorns and chives, season with salt, pepper, lemon juice, and a little lemon zest. Using timbale rings, make 4 timbales, wrap the salmon around them, and tie them with the chives. Refrigerate for about 4 hours. Garnish each with a teaspoon of trout caviar.
