Ingredients for 6 servings:
- 2 tbsp oil for the baking sheet
- 1 tbsp sea salt, coarse
- 3 tbsp sesame, if desired
- 4 onions, small, quartered
- 6 small potatoes, halved
- 1 bulb(s) garlic, cut crosswise
- 150 g mozzarella or feta cheese, in cubes
- 1 zucchini
- 3 bell peppers, cut into pieces
- 150 g mushrooms
- 2 stalk(s) leeks, in pieces
- 150 g cherry tomatoes, whole
- 150 g bacon, diced
- Spices)
- 4 tbsp oil
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Preheat oven to approximately 165°C (fan). Oil a deep-sided baking sheet and sprinkle with coarse salt (and sesame seeds, if desired). Arrange the potatoes, garlic, onions, and vegetables on the baking sheet. Make a marinade from the oil and spices and spread it over the ingredients. Top with additional ingredients like cheese or bacon and cook in the oven for 35-45 minutes. Ideal for preparing ahead of time, it’s easy to vary when you’re tired of the same old pasta salad for grilling.
