Ingredients for 6 servings:

  • 2 tbsp oil for the baking sheet
  • 1 tbsp sea salt, coarse
  • 3 tbsp sesame, if desired
  • 4 onions, small, quartered
  • 6 small potatoes, halved
  • 1 bulb(s) garlic, cut crosswise
  • 150 g mozzarella or feta cheese, in cubes
  • 1 zucchini
  • 3 bell peppers, cut into pieces
  • 150 g mushrooms
  • 2 stalk(s) leeks, in pieces
  • 150 g cherry tomatoes, whole
  • 150 g bacon, diced
  • Spices)
  • 4 tbsp oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to approximately 165°C (fan). Oil a deep-sided baking sheet and sprinkle with coarse salt (and sesame seeds, if desired). Arrange the potatoes, garlic, onions, and vegetables on the baking sheet. Make a marinade from the oil and spices and spread it over the ingredients. Top with additional ingredients like cheese or bacon and cook in the oven for 35-45 minutes. Ideal for preparing ahead of time, it’s easy to vary when you’re tired of the same old pasta salad for grilling.
