Bruschetta with tomatoes, onions and garlic

Ingredients for 5 servings:

  • 6 beefsteak tomatoes or vine tomatoes
  • 2 ½ garlic cloves
  • ½ onion(s)
  • 6 tbsp olive oil or neutral oil
  • 2 ½ ciabatta
  • 1 tsp seasoning salt for tomatoes
  • salt and pepper

Instructions

Working time approx. 35 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 45 minutes

Wash the tomatoes and remove the green parts, then halve and dice into small cubes. Chop the garlic and onion and add to the tomatoes. Mix with 3 tablespoons of oil and 1-2 teaspoons of tomato salt. Refrigerate for at least 2 hours. Preheat the oven to 180-200°C (fan oven). Remove the diced tomatoes from the refrigerator. Cut the bread into approximately 1 cm thick slices and brush with the remaining oil. Place a sheet of baking paper on the oven rack and arrange the ciabatta slices on top. Bake on the middle rack of the preheated oven for about 5-8 minutes, until golden brown and not too dark or hard. Remove the ciabatta slices from the oven and spread 0.5-1 tablespoon of the tomato-garlic mixture on each slice.
