Crumble the pumpernickel and butter biscuits. Briefly toast them together in a non-stick pan with butter. Sprinkle 2 tablespoons of sugar over them and gently caramelize over medium heat. Then let them cool on a plate. Mix the quark, cream cheese, 1 tablespoon of sugar, vanilla sugar, and lemon juice. Heat the raspberry and blackcurrant jelly in a pan over medium heat. Once the jellies are liquid, add the raspberries and bring to a boil briefly, crushing the raspberries. Layer the pumpernickel, quark cream, and raspberries in glass bowls. Refrigerate the Westphalian quark dish until ready to serve. Johannes prepared this recipe as a dessert on the show “The Perfect Dinner” – Day 2 from Bielefeld – on Tuesday, March 8, 2022.
