Westphalian quark dish with pumpernickel and raspberries

Ingredients for 5 servings:

  • 100 g pumpernickel
  • 100 g butter biscuits
  • 3 tbsp sugar
  • 250 g quark, 40% fat
  • 100 g cream cheese
  • 1 packet of vanilla sugar
  • 1 tbsp lemon juice
  • 250 g raspberries
  • 1 tbsp raspberry jelly
  • 1 tbsp currant jelly

Instructions

Working time approx. 35 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 25 minutes

Crumble the pumpernickel and butter biscuits. Briefly toast them together in a non-stick pan with butter. Sprinkle 2 tablespoons of sugar over them and gently caramelize over medium heat. Then let them cool on a plate. Mix the quark, cream cheese, 1 tablespoon of sugar, vanilla sugar, and lemon juice. Heat the raspberry and blackcurrant jelly in a pan over medium heat. Once the jellies are liquid, add the raspberries and bring to a boil briefly, crushing the raspberries. Layer the pumpernickel, quark cream, and raspberries in glass bowls.
