Ingredients for 4 servings:

  • 3 onions
  • 1 leek(s)
  • 200 ml milk
  • 4 eggs
  • 100 ml mineral water
  • 150 g flour
  • 3 tbsp oil
  • 200 g ham (Katenschinken), diced
  • Thyme
  • salt and pepper
  • rosemary
  • nutmeg

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Roughly dice the onion and slice the leek. Separate the eggs. Mix the egg yolks, milk, mineral water, and flour. Season with salt, pepper, and nutmeg. Beat the egg whites until stiff, then fold into the batter. Heat 1 tablespoon of oil in a pan, fry the onions, leek, and ham for 3-4 minutes. Add the herbs, fry briefly, and remove from the pan. Heat 1 tablespoon of oil in the pan. Cover and fry half of the batter over low heat for 5-6 minutes, turning once. Tear the batter into pieces with two forks. Remove from the pan. Cook the remaining batter in the same way. Add the two pancakes, the leek mixture, and the ham to the pan. Fry for 2-3 minutes, turning occasionally. Season with pepper and sprinkle with the herbs.
