Ingredients for 10 servings:
- 10 sausages (wild boar)
- 15 g cinnamon
- 1 pinch of nutmeg
- 4 carnations
- 3 allspice berries
- 1 tsp coriander seeds
- 400 ml chopped tomatoes from the can
- 2 tbsp tomato paste
- 1 mandarin orange(s) or clementine, remove all seeds
- ½ tsp turmeric
- 1 tsp salt
- 2 tbsp curry powder
- 2 tbsp beet syrup
- 2 tbsp spice(s) (Christmas spice)
- 1 tsp cayenne pepper or chili powder
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Combine the Christmas spice ingredients and grind them in a mortar and pestle. You won’t need all of them; the rest can be stored in an airtight jar and used for another Christmas dish. Combine all the curry sauce ingredients, blend, and bring to a boil for 2-3 minutes. Meanwhile, preheat the grill. Grill the wild boar sausages for 2 minutes on each side until browned and crispy. Then chop the sausages and spread the curry sauce on top – done. Enjoy your barbecue.
