Ingredients for 4 servings:

  • 400 g potatoes, small (La Ratte or triplets)
  • 1 bulb(s) garlic, small
  • 4 sprigs rosemary
  • 1 tbsp salt (fleur de sel)
  • 400 ml olive oil, virgin (depending on the size of the pan)

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the potatoes thoroughly, but do not peel them. Remove any loose skin from the garlic cloves, but do not peel them either. Add enough oil to the pan so that about half of the potatoes will be submerged. Heat the oil in a deep, lidded pan. Add the potatoes, rosemary sprigs, and fleur de sel, and cook with the lid on. Shake the pan well every now and then. After about 5 minutes, add the garlic and continue cooking. The cooking time depends on the size of the potatoes.
