Sweet potato balls

Ingredients for 4 servings:

  • 500 g sweet potatoes
  • ½ bunch of spring onions
  • 1 egg(s)
  • ½ tbsp cane sugar
  • 1 tsp salt
  • 1 tbsp flour
  • 1 tbsp coriander greens, chopped
  • Oil for frying
  • Chili sauce, for dipping

Wash, peel, and finely dice the sweet potatoes. Steam in a steamer until soft or boil in a little water. Drain and let drain well. Place the diced potatoes in a bowl and mash. Trim, wash, and finely chop the spring onions. Add them to the sweet potato mash along with the egg, sugar, salt, and flour and mix well. The dough should be very dry; it shouldn’t stick to your fingers. Stir in the coriander. Heat the oil in a deep saucepan. With moistened hands, form the mashed potatoes into walnut-sized balls and fry in the hot oil for about 3-4 minutes until golden brown. Drain the sweet potato balls on kitchen paper. Serve with chili sauce. The balls can be eaten hot or cold.
