Lemon Buttermilk Waffles

Ingredients for 5 servings:

  • 150 g butter
  • 120 g sugar
  • 4 eggs
  • 350 g flour
  • 2 tbsp vanilla sugar
  • 1 tbsp baking powder
  • 2 lemons, organic
  • 600 ml buttermilk (lemon buttermilk)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Whisk together the butter, sugar, eggs, and vanilla sugar until well combined. Add the baking powder and flour (in that order) without overmixing. Grate the lemon zest and add it as well. Squeeze the lemon. While stirring gently, add the lemon buttermilk, followed by the lemon juice and lemon pulp to the other ingredients. Bake in the waffle iron at maximum heat until lightly browned. The faster the batter gets into the hot waffle iron, the better the waffles will rise. Buttermilk tip: We prefer MILRAM because it’s the least sweet, has a nice fruity flavor, and is also good value for money. If you don’t want to grate the lemon zest, you can replace 1 lemon with 1 pct grated lemon zest and 25 ml lemon juice.
