Ingredients for 4 servings:
- 500 g minced beef
- 4 onions
- 2 garlic cloves
- Salt
- Pepper, freshly ground
- 2 eggplant(s)
- 2 red bell peppers
- 2 zucchinis
- 1 large can of tomatoes, peeled
- 250 ml white wine
- Thyme
- rosemary
- basil
- 1 jar black olives without stones
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Peel the onions and garlic and dice them into small cubes. Slice the eggplant and zucchini. Dice the bell pepper. Heat the olive oil in a pan and sauté the onions and garlic until translucent. Add the minced meat, season with salt and pepper, and fry until crumbly. Add the vegetables and sauté for another 5 minutes. Add the tomatoes, wine, and herbs, and simmer for another 15 minutes. Season with salt, pepper, and herbs. Halve the olives and add them to the minced meat mixture. Bring back to a boil briefly.
