The perfect healthy carrot and mirabelle plum cake recipe with a picture and simple step-by-step instructions.
to sprinkle:
- 150 g Mirabelle plums
- 2 Pc. Eggs
- 1 pinch Salt
- 200 g Wholemeal spelled flour
- 50 g Ground almonds
- 50 g Buckwheat flour
- 2 tsp Tartar baking powder
- 1 tsp Cinnamon
- 1 Msp Vanilla powder
- 3 tbsp Sesame
- 25 g Melted coconut oil
- 100 ml Maple syrup or rice syrup
- 30 ml Milk
- 1 tbsp Sesame
- Separate the eggs and beat the egg whites with a pinch of salt until stiff. Mix all dry ingredients in a bowl, then quickly stir in egg yolks, milk and maple syrup. Fold in the grated carrots and finally fold in the egg whites carefully. Halve and core the mirabelle plums, cut approx. 1/3 into small pieces and fold into the dough.
- Pour the dough into a loaf pan that has been greased and dusted with flour. Lightly press the mirabelle plums into the dough with the cut surface facing up. Sprinkle with sesame seeds. Bake in a preheated oven at 180 degrees circulating air (or 200 degrees top / bottom heat) for about 50 – 60 minutes.
- Let the cake cool in the pan, then turn it out, turn it over and dust with powdered sugar to serve.
- You can also use zucchini instead of carrots, but you have to drain them well in a sieve and then squeeze them out, as they contain a lot of moisture. Pumpkin is also good for this cake. Instead of mirabelle plums, you can also use small apricots or grapes. The sesame can also be omitted without replacement. If you want, stir 2 tbsp chia seeds into the batter.
