Breaded Zucchini Rings, Filled for Breakfast or Lunch

The perfect breaded zucchini rings, filled for breakfast or lunch recipe with a picture and simple step-by-step instructions.

  • 2 Discs Zucchini fresh
  • 3 Pc. Eggs (L)
  • 1 packet White sauce
  • 1 Pc. Fresh tomato
  • 1 branch Basil
  • 1 branch Parsley
  • 100 g Finely chopped bacon
  • Flour
  • Breadcrumbs
  • Salt
  • Pepper from the grinder
  • Butter
  1. From my huge zucchini that I wanted to and have boiled down, I took 2 slices aside to try something small for in between.
  2. I cut the kernels out of the slices, breaded them like a schnitzel and put them in a pan heated with fat. Bake them on a low flame and turn them, then put the egg in the middle and keep baking on a low flame.
  3. In the meantime, sear the bacon and prepare a white sauce. This seasoned with pepper from the mill and salt and then put some decoration on the plate. Basil, parsley and tomato.
  4. Put the sauce on the plate and put the filled zucchini slice in the sauce, put the bacon on top and you can see what came out of the photos.
  5. For in between I found it delicious but as always it is a question of taste … I hope I haven’t forgotten anything, bon appetit
