Mixed Salad with Soy Vinegar Dressing and Party Prawns
The perfect mixed salad with soy vinegar dressing and party prawns recipe with a picture and simple step-by-step instructions.
Mixed salad:
- 100 g Mini Roman vine tomatoes
- 100 g Mushrooms
- 100 g Radish
- 100 g Corn
- 100 g Cucumber
- 1 Shallot approx. 50 g
Soy vinegar dressing:
- 1 tbsp Sweet soy sauce
- 1 tbsp Light soy sauce
- 2 tbsp Light rice vinegar
- 1 tbsp Freshly grated ginger
- 1,5 tsp Sugar
- 2 tbsp Sunflower oil
- 1 tbsp Very finely chopped spring onions
- 1 tbsp Sherry
Party prawns: (For 2 people!)
- 1 pack Party shrimp 100 g
- 1 tbsp Sunflower oil
- 2 big pinches Coarse sea salt from the mill
- 2 big pinches Colorful pepper from the mill
Serve:
- Coriander leaves for garnish
Mixed salad:
- Wash and quarter the mini-panicle tomatoes. Clean / brush the mushrooms and cut into slices. Clean, wash and slice the radishes. Clean and wash the peppers and cut into small triangles. Scrape the cucumber with a kitchen helper, cut into slices and quarter the slices. Assemble the Chinese cabbage leaves, cut out the leaf hearts and cut into fine strips. Peel and finely dice shallot. Put all ingredients (mini vine tomatoes, mushrooms, red peppers, radishes, corn, cucumber, Chinese cabbage and shallots) in a bowl. Mix well in a bowl and mix well.
Soy vinegar dressing:
- Clean and wash the spring onions and dice them very, very finely. All ingredients (1 tablespoon sweet soy sauce, 1 tablespoon light soy sauce, 2 tablespoons light rice vinegar, 1 tablespoon freshly grated ginger, 2 tablespoons strong chicken stock, 1.5 tablespoons sugar, 2 tablespoons sunflower oil, 1 tablespoon very finely chopped spring onions and 1 tablespoon sherry) Mix well and drizzle over the salad. Mix the salad well and refrigerate until ready to serve.
Party prawns: (For 2 people!)
- 3rd party fry the prawns in a small pan with sunflower oil (1 tbsp) for 1 minute on both sides and season with coarse sea salt from the mill (2 big pinches) and colored pepper from the mill (2 big pinches).
Serving: (For 2 people!)
- Serve mixed salad with soy vinegar dressing and party prawns, garnished with coriander leaves.
