Rhubarb Cake Low in Calories

The perfect rhubarb cake low in calories recipe with a picture and simple step-by-step instructions.

  • 1 kg Rhubarb
  • 100 g Margarine
  • 10 g Stevia
  • 150 g Yogurt
  • 1 Egg
  • 2 Egg yolk
  • 80 g Flour
  • 50 g Semolina
  • 1 Baking powder
  • 1 Vanilla custard powder
  • 400 ml Milk
  • 2 Protein
  • 50 g Sugar
  1. Clean / peel the rhubarb well and cut into 1 cm pieces.
  2. Beat the soft margarine with stevia and yogurt. Then stir in egg and egg yolks, as well as flour, semolina and baking powder. Pour the dough into a 26 cm springform pan and prebake for 15 minutes at 170 °.
  3. Boil the pudding with milk. Add the rhubarb to the boiling pudding and cook for 5 minutes while stirring. Pour the mixture onto the pre-baked dough. Bake everything for another 20 minutes.
  4. Beat the egg whites firmly. Continue beating and slowly pour in the sugar until you get a shiny, firm meringue. (If you like, you can leave out the sugar and only process the egg white mixture) Pour the meringue onto the hot rhubarb mixture and bake for 20 minutes at 150 °!
  5. Slice well cooled and enjoy!
