Chocolate and Cherry Truffles

The perfect chocolate and cherry truffles recipe with a picture and simple step-by-step instructions.

for the filling:

  • 180 ml Cream
  • 45 g Homemade fruit powder sour cherry
  • 30 g Glucose syrup
  • 270 g Whole milk couverture
  • 15 g Butter, soft

Also:

  • 1 plate Hollow balls of whole milk 63 pieces
  • 200 g Whole milk couverture
  • 2 tbsp Sour cherry fruit powder
  • 2 tbsp Fine sugar
  1. Chop the couverture … I had pellets mix the cream with the fruit powder, add glucose syrup and bring to the boil. Add the couverture and stir until it has dissolved
  2. Let the mixture cool down, add the soft butter and stir until smooth
  3. Pour the mixture into a piping bag with a smooth nozzle and fill the hollow sphere up to just below the edge.
  4. close the truffle with a tempered couverture the next day
  5. When the couverture has set, temper the rest of the couverture again and coat the truffles with it
  6. Mix the fruit powder and sugar and roll the truffles in it. place on baking paper and let dry
  7. Put the finished truffles in paper sleeves. to give away or to eat yourself
