Chocolate and Cherry Truffles
The perfect chocolate and cherry truffles recipe with a picture and simple step-by-step instructions.
for the filling:
- 180 ml Cream
- 45 g Homemade fruit powder sour cherry
- 30 g Glucose syrup
- 270 g Whole milk couverture
- 15 g Butter, soft
Also:
- 1 plate Hollow balls of whole milk 63 pieces
- 200 g Whole milk couverture
- 2 tbsp Sour cherry fruit powder
- 2 tbsp Fine sugar
- Chop the couverture … I had pellets mix the cream with the fruit powder, add glucose syrup and bring to the boil. Add the couverture and stir until it has dissolved
- Let the mixture cool down, add the soft butter and stir until smooth
- Pour the mixture into a piping bag with a smooth nozzle and fill the hollow sphere up to just below the edge.
- close the truffle with a tempered couverture the next day
- When the couverture has set, temper the rest of the couverture again and coat the truffles with it
- Mix the fruit powder and sugar and roll the truffles in it. place on baking paper and let dry
- Put the finished truffles in paper sleeves. to give away or to eat yourself
