Blueberry Quark Cake

The perfect blueberry quark cake recipe with a picture and simple step-by-step instructions.

For the dough:

  • 250 g Flour
  • 1 packet Dry yeast
  • 25 g Sugar
  • 1 packet Vanilla sugar
  • 1 pinch Salt
  • 1 Egg
  • 50 g Butter
  • 100 ml Warm milk

For covering:

  • 4 Egg yolk
  • 500 g Quark
  • 170 g Sugar
  • 1 packet Vanilla custard powder
  • 4 Protein
  • 200 g Whipped cream
  • 1 Glass Blueberries

For the dough:

  1. Sift the flour into a bowl.
  2. Add the dry yeast and mix.
  3. Mix sugar and vanilla sugar and add.
  4. Add salt, egg, butter and milk and knead everything.
  5. Cover the dough and keep it warm for about 30 minutes until it has visibly enlarged.
  6. Knead the dough well again on the work surface and roll it out in a greased springform pan.

For covering:

  1. Put egg yolk, quark, sugar and pudding powder in a bowl and stir.
  2. Beat the egg whites until stiff and fold in.
  3. Beat the whipped cream and fold in as well.
  4. Put the quark mixture on the dough and smooth it out.
  5. Drain the blueberries well and spread them over the curd mixture.
  6. Bake at 180 degrees for about 45 minutes.
