Sauces: Dill Sauce with Hint of Mustard …

The perfect sauces: dill sauce with hint of mustard … recipe with a picture and simple step-by-step instructions.

  • 40 g Branded butter
  • 40 g Flour
  • 250 ml Good meat broth
  • 250 ml Milk
  • 1 teaspoon Mustard medium hot
  • 1 teaspoon Lemon juice
  • 1 bunch Fresh dill
  • 1 bunch Pepper and salt
  1. Leave the good butter in a small saucepan, add the flour and sweat for about 2 minutes while stirring constantly. Gradually add the stock and milk while stirring until a smooth sauce is formed. Simmer gently over a mild heat, stirring occasionally, for 7 minutes.
  2. During this time, wash the dill under cold water and shake it dry again. Pluck the dill flags from the stems and then chop very finely with a large knife. Remove the sauce from the heat, fold in the mustard, lemon juice and dill and season again before serving. Usually there is no need to add pepper and salt – the sauce is wonderfully spicy even without pepper and salt and goes particularly well with fried fish.
  3. I served my sauce with pollack fillets and spinach leaves. There was of course potatoes.
