Christmas Cookies: Piles of Coconut; Thermomix

The perfect christmas cookies: piles of coconut; thermomix recipe with a picture and simple step-by-step instructions.

  • 125 g Desiccated coconut
  • 75 g Flour
  • 4 Pc. Protein
  • 1 pinch Salt
  • 125 g Sugar
  1. Roast the coconut flakes and flour in a pan without added fat, stirring occasionally, until it starts to smell. Let cool down.
  2. Put the mixer attachment in the mixing bowl. Beat the egg whites on speed 4 for 2 minutes. Add salt, sugar and the coconut mixture. Fold in for 20 seconds at level 2 or 3.
  3. Form small balls with slightly wet hands and place on a baking sheet lined with baking paper. Bake in the preheated oven on the middle rack for about 15 – 18 minutes at 180 degrees top / bottom heat.
  4. I put a hazelnut on each of the balls before baking. But you can also use any other nuts you want or leave them out entirely. If you want, you can sprinkle the finished and cooled macaroons with liquid chocolate.
