Chocolate Muffins with Quark Filling

The perfect chocolate muffins with quark filling recipe with a picture and simple step-by-step instructions.

  • 50 g Bitter chocolate
  • 250 g Flour
  • 2 tsp Baking powder
  • 40 g Unsweetened cocoa
  • 2 tsp Instant espresso powder
  • 1 Egg
  • 150 g Brown sugar
  • 1 pinch Salt
  • 125 ml Oil
  • 300 ml Buttermilk
  • 150 g Quark
  • 3 tbsp Powdered sugar
  1. Grate the chocolate. Mix flour with baking powder, cocoa and espresso powder
  2. Mix the egg, sugar and salt. Then add the buttermilk and oil. Finally add the flour mixture with the chocolate shavings and mix.
  3. Mix the quark with the vanilla sugar and powdered sugar. Caution: do not use low-fat quark !!!!
  4. Line the muffin tray with paper cases and fill about 1/3 of the batter into the molds. Then put a dollop of quark in the middle and the rest of the batter on top. Bake over medium heat for about 25 minutes. (approx. 180 ° C, gas level 3) Then decorate with icing as desired or simply dust icing sugar over it.
  5. According to the recipe, the batter is for 12 muffins – but I got 16 out! Do not fill the molds too full, the dough will rise a lot!
