Baking: Potato and Quark Cakes from Mecklenburg-Western Pomerania

  • 2 piece Eggs, separately
  • 150 g Sugar
  • 1 pinch Salt
  • 500 g Quark
  • 500 g Floury potatoes
  • 1 packet Vanilla sugar
  • 2 teaspoon Baking powder
  • 2 teaspoon Grated tonka bean
  • Possibly some brown butter and powdered sugar
  1. Boil the potatoes until soft, peel and let cool.
  2. Mix the egg yolks with a pinch of salt and sugar until frothy.
  3. Add quark, baking powder, tonka bean zest and baking powder. Finely grate the cold potatoes and stir everything into a smooth batter. Beat the egg whites until stiff and work carefully with a whisk under the dough.
  4. Grease and crumble a cake tin (28 cm). Pour in the dough and bake the cake at 180 degrees in a preheated oven for about an hour. (Toothpick sample)
  5. TIP 5: After baking, brush with brown butter and sprinkle with powdered sugar.
