- 2 piece Eggs, separately
- 150 g Sugar
- 1 pinch Salt
- 500 g Quark
- 500 g Floury potatoes
- 1 packet Vanilla sugar
- 2 teaspoon Baking powder
- 2 teaspoon Grated tonka bean
- Possibly some brown butter and powdered sugar
- Boil the potatoes until soft, peel and let cool.
- Mix the egg yolks with a pinch of salt and sugar until frothy.
- Add quark, baking powder, tonka bean zest and baking powder. Finely grate the cold potatoes and stir everything into a smooth batter. Beat the egg whites until stiff and work carefully with a whisk under the dough.
- Grease and crumble a cake tin (28 cm). Pour in the dough and bake the cake at 180 degrees in a preheated oven for about an hour. (Toothpick sample)
- TIP 5: After baking, brush with brown butter and sprinkle with powdered sugar.
