Cake in Glass …

The perfect cake in glass … recipe with a picture and simple step-by-step instructions.

  • 1 tablespoon Butter
  • 40 g Amarettini almond biscuits
  • 1 leaf Gelatin white
  • 0,5 Lemon fresh
  • 150 g Quark
  • 1 Tablespoon (level) Sugar
  • 1 packet Vanilla sugar
  • 100 g Red currants fresh
  • 1 tablespoon Sugar
  • 1 tablespoon Grappa
  • 2 Amarettini almond biscuits
  • Whipped cream
  • Mint fresh
  1. Melt the butter in a saucepan. Take off the stove and let cool down a bit. Put the amarettini in a freezer bag and “run over” it with the rolling pin 😉 (finely crumble). Mix the biscuit crumbs with the butter. Divide into two dessert glasses, but do not press down. Refrigerate.
  2. Soak gelatine in cold water. Squeeze the lemon. Mix the quark with lemon juice, sugar and vanilla sugar until creamy. Dissolve the gelatine. Mix with a tablespoon of the quark cream. Add to the rest of the cream and stir in well. Spread the quark mixture between the two dessert glasses and chill for an hour.
  3. Wash and drain the currants. Put two panicles aside as decoration. Pluck the remaining berries. Mix with sugar and grappa and refrigerate until ready to serve.
  4. Chop up the amarettini. Spread the currants on the quark layer. Garnish with cream, amarettinis, mint and currant panicles.
