- 1 Fresh onion
- 1 Solo garlic
- 300 g Tomatoes happened
- 200 ml Water
- 0,5 Zucchini fresh
- 0,5 Eggplant fresh
- 0,5 tsp Crushed red pepper
- 1 tsp Curry powder
- 1 pinch Ground cumin
- 1 pinch Ground caraway
- Oil
- Peel the onion and garlic and cut into small pieces. Wash the zucchini and aubergine with hot water, quarter them lengthways and cut into small pieces.
- Heat the oil in a saucepan, sauté the onions until translucent, then add the garlic and sauté.
- Then add the spices and sauté briefly.
- Stir in tomatoes and water and bring to the boil.
- Then add the zucchini and eggplant.
- With the lid on, let it simmer for about 15-20 minutes.
- Meanwhile cook the noodles (amount according to hunger).
