  • 1 Jaroma cabbage heart
  • 20 g Clarified butter
  • 1 Onion
  • 4 Bacon slices
  • 2 tablespoon Water / broth
  • 2 Pinches Black pepper from the mill
  • 2 Pinches Salt
  • 2 Pinches Red chilli flakes
  1. First of all: If you need cabbage leaves for roulades, there is always a leftover head of cabbage. It can be used in a stew or made into a quick vegetable. Today I seared my Jaromakohl heart and then cooked it. It tasted delicious !!
  2. Preparation: first cut the cabbage into large cubes, dice the onion and cut the bacon slices into strips.
  3. Heat the clarified butter in a saucepan and “fry” the cut cabbage in it … it can get a brown color, because this gives it a flavor-intensive aroma. When the cabbage is appetizingly browned, add the bacon strips, onion cubes and spices and continue to sizzle, turning frequently, until the onions begin to brown.
  4. Now add a small shot of water or broth and let the cabbage stew covered for a few minutes, until it is soft but still has a bit of “bite”.
