- 100 g Yeast, fresh
- 500 ml Whole milk, lukewarm
- 0,5 teaspoon Sugar, white
- 1 Kg Flour, sifted
- 300 g Butter, soft, unsalted
- 100 g Sugar, brown
- 3 Medium sized Egg yolks, fresh
- 2 Sachets Vanilla sugar
- 2 teaspoon Salt
- 250 g Raisins, dark or light
- 250 g Walnuts, roasted, roughly chopped
- 250 g Sugar cubes
- 1 pinch Salt
- Sugar, brown
- 1 Big one Egg, whisked
- Mix the fresh yeast with the lukewarm whole milk and white sugar, allow to rise. Mix with the sifted flour, unsalted, soft butter, brown sugar, egg yolks, vanilla sugar and salt. Knead in the raisins and the roasted, roughly chopped walnuts.
- Finally, knead in the sugar cubes by hand.
- Form six large rolls and place 3 of each on a baking sheet lined with baking paper.
- Mix a large, beaten egg with a pinch of salt and a little brown sugar. Spread the mixture on the rolls and let rise a little more.
- Bake in a preheated oven at 180 ° C for about 40-45 minutes.
