Lemon Cookies …

The perfect lemon cookies … recipe with a picture and simple step-by-step instructions.

  • 100 g Butter
  • 75 g Sugar
  • 1 packet Vanilla sugar
  • 1 pinch Salt
  • 1 Egg yolk
  • Zest of an untreated lemon
  • Alternatively 1 teaspoon lemon peel flavor
  • 1 Lemon fresh
  • 250 g Flour
  • 5 tablespoon Powdered sugar
  • 3 tablespoon Crema di limoncello
  • Food color yellow
  1. Mix the butter with sugar, vanilla sugar, salt, egg yolk and lemon zest (flavor) until creamy. Squeeze the lemon. Stir in the juice. Add flour and knead into a smooth dough. Place in the refrigerator for 30 minutes.
  2. Roll out the dough on a little flour. Cut out biscuits and place on a baking sheet lined with baking paper. Bake in the oven at 200 degrees for about 10 minutes. Remove from oven and allow to cool.
  3. Mix the icing sugar with the limoncello until smooth. If you like, stir in some food coloring. Glaze the biscuits with it and let them dry.
