Semolina Pudding with Mandarin Oranges

The perfect semolina pudding with mandarin oranges recipe with a picture and simple step-by-step instructions.

  • 1 Jar, 34 ml Mandarin oranges
  • 30 g Pistachio nuts
  • 2 500 g bottles Vanilla milk
  • 50 g Butter
  • 150 g Soft wheat semolina
  • 2 Eggs size M
  • 1 tbsp Butter
  • 1 pinch Sugar
  • 1 pinch Salt
  • Possibly some butter
  1. Pour the mandarins into a colander and allow to drain. Chop the pistachios. Bring 900 g milk and butter to the boil, remove the pan from the stove and sprinkle in semolina while stirring. Bring to the boil once, remove from the stove and cover and let soak for approx. 5 minutes.
  2. In the meantime, separate the eggs. Beat the egg whites until stiff, pour in the sugar and salt. Whisk egg yolks with 100 ml milk, stir into the semolina. Fold in the egg whites. Divide into 4 plates, spread the tangerines on top and serve sprinkled with pistachios.
  3. Possibly. Pour brown butter over it.
