Pink Pasta
The perfect pink pasta recipe with a picture and simple step-by-step instructions.
- 250 g Penne
- 2 Beetroot fresh
- 1 small Clove of garlic
- 1 Onion
- 1 squeezed Orange
- 50 ml Vegetable broth
- 100 ml Plant cream
- 1 tsp Fennel seeds
- 1 Star anise
- Pepper
- Soy sauce
- Postelein, rocket or lamb’s lettuce to taste
- Cook the pasta as usual.
- Finely dice the beetroot and onion. Sauté in a little oil. Squeeze the garlic.
- Pour in the orange juice and stock. Put the spices in a tea bag and hang in the pot. Let simmer for 20 minutes.
- Remove the spices in the tea bag. Pour in the plant cream and roughly puree. Season with soy sauce and pepper.
- Mix the pasta with the sauce. Put the salad on a plate and serve the pasta on top.
